SPICY OMENA RECIPE

The Omena as known in Kenya has quite a wide range of names, in Uganda we know it as Mukene and the difference in the names carries with it the diversity in the preparation of this dish.

Today, Fork Gram has sourced you the Kenyan Version of the stew, it has its origins at the shores of Lake Victoria in Western Kenya and its an enjoyed delicacy.

The recipe is quite easy and quick so let's get started....

Servings : 2 

Ingredients
• silver cyprinid ( Omena) 2 cups
• 1 large tomato
• 2 garlic pieces
• 4 tablespoon of olive oil
• 3 pinches of salt
• teaspoon of rosemary
• a handful of coriander finely chopped
• 5 tbsp of coconut cream
• teaspoon of curry / tumeric

Directions

• The preparation of Omena always kicks off with thoroughly washing it no matter the recipe.. since it locally comes with alot of dirt.

• After this step put the fish to a boil and in it drop a piece of crashed garlic... This is to decrease on the strong scent of Omena.

• While that is boiling, grab a pan and put it on medium heat, saute the onions and garlic and just before they Brown and the blended tomatoes , let this simmer for about 5 mins

• Now add the powder ingredients ( curry, rosemary) to the source and stir, equally add the coconut cream and stir until when all are well Incorporated

• Now drain the Omena from the water and mix it with the sauce on medium heat and stir the stew until when all ingredients are well Incorporated

• Let the stew simmer for more than 5 mins on low heat and your Omena is ready...

• Serve as sauce to any Dish
