BEEF AND VEGETABLE STEW RECIPE 


​It’s been loooooong foodies I really missed you guys to the extent that it’s nostalgic seeing myself type a recipe again… I’ve been away for sometime but what matters most is that I’m back bigger and better… to ease your life behind the stove and make cooking fun again.

Today’s menu has Beef and Vegetable Stew. A meal so dear to me because as someone who is soo picky with beef this is one of the few ways I enjoy this stew… it’s a combination of the fried and saucy beef it just hits the right spot bringing the savory sweetness with the gravy and jaw dropping taste of the crispy meat

Here is all you have to know and do to get your plate looking like mine

Duration: probably around 1 and a half hours.

Ingredients 

  1. 1kg of Beef ( preferably little to no bones but this is optional)
  2. 1/2 a small Cabbage
  3. 1 large Onion
  4. 2 large Tomatoes 
  5. 1 large Carrot
  6. 2 large Bell peppers 
  7. Garlic
  8. Salt
  9. Curry powder
  10. Cooking Oil
  11. 2 cups of beef broth

Ingredients that I didn’t add but you can

  • Potatoes
  • Coriander 
  • Basically vegetables of your choice 

Directions 

Wash the beef and cut it into cubes or preferable size and put it to a boil

I highly recommend adding some salt just a little use your instincts 😂 just to tenderize the meat

Let it boil for over 30 to 40 minutes on high heat so that it is fully cooked and tender

Drain the meat from the stalk and keep the stalk aside then lightly season the meat with salt and curry powder 

On high heat, fry the meat until crispy on the outside for about 8 minutes then set aside

Heat up a large pan and add oil, add in the onions and garlic when the oil is heated up and sauté this until the onions turn translucent 

Now add in the meat and fry together 

Add in the tomatoes, cabbage, bell peppers and carrots with a minute in between one after the other 

note:

[ if you added potatoes this is the time to add them]

Cover and let it simmer

In a different bowl mix the curry powder of your choice (mine being royco) with the broth and add this to the beef pot.. if you have potatoes in the stew add in a little more broth to allow them to boil.

Let this simmer on low heat for over 15 minutes and garnish with coriander 

Serve Hot over Rice, Chapati, Spaghetti or even Naan
