All you need to know about Jollof Rice History!
It has become very popular all over the world! Making its way to be one of the most popular African dishes!
It is prepared mostly in Nigeria, Senegal, Ghana and many more West African countries
The origins of jollof rice can be traced to the Senegambian region that was ruled by the Wolof or Jolof Empire in the 14th century, spanning parts of today's Senegal, The Gambia and Mauritania, where rice was grown. The dish has its roots in a traditional dish called thieboudienne, containing rice, fish, shellfish and vegetables. (according to Wikipedia)
So that's a brief walk down the history of jollof rice
Due to its popularity many recipes have been developed but the one we are going to share today is the best I have used, so stick around.

JOLLOF RICE RECIPE
Servings : 3 people
Total time : 1:30 hrs
Ingredients
• 6 pieces of chicken
• Seasoning
- salt
- curry powder
- spices and herbs ( cloves)
• 4 large onions • 5 cups of water
• 1kg Long grain Rice • 1 piece garlic
• 8 large tomatoes. • 2 tbsp tomato paste
• 2 full green peppers
• cooking oil
Directions
• In a pan place the chicken, and measure your usual amount of seasoning for 6 pieces of chicken and add it
• Add water, onions, salt and boil on mid heat for 45 mins Max.
• In a blender add 3 tomatoes half a garlic piece/ full truly depends on you, and a full pepper, blend this to puree.
• When the chicken is ready, remove it from the soup and keep a full cup of the soup
• Deep Fry the chicken
• In another pan, add some oil, tomato paste and the blended puree, let this simmer for 5 mins on mid heat range.
• After the 5 mins add in the washed rice , some peppers and stir.
• Add in the chicken and pour in enough water for the rice to cook but part of that water should be the chicken soup you kept!
• If your not such a fun of chicken soup use fresh water
• Leave this to cook for about 45 mins and it will be ready
• Serve hot
• Enjoy
